Mix the ingredients well to combine and then divide evenly between 24 mini cupcake tins, or any small candy mold. Make sure to line them with cupcake paper. Chocolate: Feel free to use your favorite chocolate. Dark chocolate would be the healthiest option with low sugar, or make them dairy-free and vegan with your go-to vegan chocolate. You can even try white chocolate chips or any flavored baking chips like caramel, butterscotch, Skor, or Reese’s, you name it! Melt chocolate: Add chocolate chips and coconut oil to a small pot. Set burner to low heat and cook until melted, stirring constantly. Remove from heat. Alternatively, you can add them to a microwave-safe bowl and melt in the microwave. when it comes to taste, these bites are a blend of sweet and nutty flavors. the peanut butter and small amount maple syrup contribute a natural sweetness that’s not overly sugary at all, allowing the rich, nutty flavors to shine through. Next, dates throw a party in the food processor with vanilla and sea salt! Then we combine the blended dates with coconut flour and salty chopped peanuts. Yummm.

Place chocolate chips and coconut oil in a bowl and microwave 45 seconds – stirring every 20 seconds – until melted. chopped/crushed peanuts – an extra boost of peanut flavor and some crunch for texture! Try using a different nut if you have a peanut allergy to add some crunch. This is an important step in this recipe because if you dipped the banana into the melted chocolate straight away, it would get very messy! Oat flour is so easy and inexpensive to make at home! I actually never buy store bought oat flour and make my own instead. All you have to do is add whole oats to a blender or food processor, then blend on high speed until the oats are finely pureed. Store in an airtight container. Once slightly cooled, pour your mixture into a silicone square large-sized ice cube tray and transfer to the freezer to set for a minimum of 1 hour or until completely firm. But now I really appreciate it since I’m older and wi--well I thought I was getting wiser but I’m actually just getting more gray hair.

These tasty treats have four essential elements: chocolate, “nougat,”“caramel,” and peanuts. It’s…VERY exciting! Last week I left the house by myself for the first time in over 8 weeks. No Eric, no Elle, no Mom. Just me. And it felt weird. Way weird. Medjool dates - a naturally sweet, dried fruit with a chewy texture and a caramel-like flavor. You can find them in the produce section of most grocery stores. Easy to customize. If you have a peanut allergy you can always swap the peanut butter out for another nut or seed butter. The options are really endless - see the substitutions section below. I then made my way over to the candy section, aka jelly bean heaven. Seriously, does every single fruity candy have a jelly bean flavor? Not that I’m complaining, because I’m all about Nerds Bumpy Jelly Beans and I’m hoarding several bags of SweeTarts Jelly Beans. WHY do candy companies think we only want jelly beans at Easter, I ask you?!These frozen banana bites can be stored in the freezer for up to 3 months in a sealed airtight container. Coconut Flour: Try 3x the amount of almond flour (I haven’t given this a try yet, but it should work) Bananas: I used 3 large bananas. Look for yellow bananas that are just ripe and sweet. Overripe bananas will be too mushy. Finally the chocolate brings it all together. Now this part is totally up to you. Feel free to dip, coat or drizzle your chocolate to your hearts content.

You will create the EASIEST 3 ingredient vegan caramel with just peanut butter, water and dates ( I promise it's still just as sweet, gooey and tasty as the real thing!).These banana bites are so much healthier and more nourishing than ice cream, loaded with plant-based proteins from nuts and nutrients from bananas, dates, and chocolate. Freeze: Place muffin tin in the freezer and freeze for 2 hours. Once the chocolate has set and the bananas are firm, carefully pop the frozen banana bites out by pushing from the bottom of each mold. Enjoy! Note 2: I used salted cashew butter in place of caramel here for simplicity but also because I feel like the flavors are really close. Now if you wanted to still have the caramel, I have a vegan caramel sauce recipe, and you could totally make that. But I was lazy and wanted to try this salted cashew butter and it was also super close. If you can’t have cashews, try the caramel or use any other nut or seed butter instead. You can also make this step the day before and keep the banana in the fridge overnight. Chocolate Shell Looking to introduce kids to kitchen activities? Then you are at the right place. This is not only a fun treat to make with kids but an ideal way to encourage them to eat healthy food. Kids would love stuffing and coating dates with chocolate.
